Donuts |
Ingredients:
1 package regular or quick-acting yeast
1/8 cup warm water
3/4 cup lukewarm milk
1/4 cup granulated sugar
1/2 tsp salt
1 egg
1/6 cup shortening
2 1/2 cups all purpose flour
1/4 cup vegetable shortening
1/4 cup butter/margarine
1/2 tsp clear vanilla extract
2 cups sifted confectioners sugar
1 tbsp milk
How to do:
Step

In a mixing bowl, dissolve the yeast in warm water.

Add the milk, sugar, salt, egg, shortening and 1 cup of flour to the yeast. Beat on low speed while using a spatula to clean the sides for about 30 seconds.

Move the speed of the mixer to medium, still scraping the sides, for 2 more minutes.

Stir in the remaining flour and mix until mixture is smooth. Cover and let rise in a warm place.

Once the Dunkin Donuts mixture has risen to double it's size (about 50-60 minutes), uncover.

Put dough on a floured surface and roll to 1/2 inch thick. Cut with a round cookie cutter until all the dough is used.

Set aside the Dunkin Donuts to rise on a cookie sheet until double it's size again, for 30-40 minutes.

Heat vegetable oil in a deep fryer or similar until it reaches 350 degrees.

Take the Dunkin Donuts one at a time and put them in the hot oil. When one side is golden brown, turn. (This takes about 1 minute per side.) Don't prick the surface of the doughnut, you don't want to fry the inside.

Take the Dunkin Donuts out once golden brown on both sides and let drip either onto a paper towel, or on a cooling rack. Let cool until you can handle.

Using a sharp knife carefully make a large cavity inside the doughnut. This is where you will put the filling.

VANILLA FILLING
In a saucepan cream the butter and shortening. Gradually add the sugar 1/2 cup at a time. Then add the milk and vanilla and beat until light and fluffy.

Using a pastry bag generously fill each Dunkin Donut with vanilla filling. Once filled, dust both sides heavily with powdered sugar.
